Summer Strawberry Pie with a Creamy Twist
This fresh summer strawberry pie is the ultimate summer dessert . . . cool, creamy, and bursting with ripe berry flavor. Nestled inside a flaky homemade crust (or your favorite store-bought version), this pie features a layer of lightly sweetened cream cheese topped with whole strawberries and a glossy, homemade glaze made from real berries. It’s a nostalgic treat with a fresh twist—just like Grandmother used to make, but with a creamy surprise. No Jell-O, no shortcuts, just pure strawberry bliss.
Summer Strawberry Pie Recipe
Yield: 6-8 servings
Ingredients
- 9 inch pie crust or my Grandmother’s Pie Crust Recipe
- small package cream cheese, softened at room temperature
- 2-3 tablespoons milk or cream
- 2 pints strawberries, divided
- 3/4 cup sugar
- 3 tablespoons corn starch
- dash of salt

Instructions
- Prepare Grandmother’s Pie Crust, use a quick frozen or this Pie Crust Mix from Williams Sonoma.
- Mix softened cream cheese with milk or cream until smooth. Spread evenly on bottom of crust.
- Select strawberries that are nearly same in size and remove stems. Place the strawberries upside down and touching on top of cream cheese with as many as will fit.
- In small pan, remove stems and cook 1 pint of berries (mashed to equal about 1 1/2 cup) with sugar, cornstarch and dash of salt. Stir until clear.
- Cool slightly and pour over berries. If seems too thick, thin with a little water before pouring.
- Chill in refrigerator.
This strawberry cream cheese pie is as beautiful as it is delicious. It’s a perfect make-ahead dessert for summer gatherings, potlucks, or just because berries are in season. Every bite combines velvety cream, sweet-tart strawberries, and a hint of old-fashioned comfort thanks to that homemade crust. Don’t be surprised if it disappears in minutes and becomes a new family favorite for generations to come.
