Mother’s Chicken Salad on Mini Pastry (A Spring Entertaining Favorite)
Chicken salad is a timeless Southern party bite with a little sweetness, a little crunch, and a whole lot of love.
There are certain recipes that instantly transport you back to baby showers, spring luncheons, Derby gatherings, and afternoons spent in a bustling kitchen where something special was always being made. This chicken salad is one of those recipes for me.
It’s my mother’s version, passed down from my grandmother, and it’s the kind of dish that quietly steals the show. Creamy, slightly sweet, dotted with fruit and crunch, and always served in something dainty and bite-sized. It’s as pretty as it is delicious.
For years, we’ve served it tucked into mini croissants or spooned into delicate pastry puffs, making it perfect for entertaining. Whether you’re hosting a spring brunch, a Kentucky Derby party, or a Mother’s Day gathering, this is one of those recipes where guests come back for seconds.
Why You’ll Love This Recipe
This isn’t your typical chicken salad. This one has just enough sweetness to feel special, balanced by savory flavors and a satisfying crunch.
- Creamy & nostalgic thanks to the homemade dressing
- Sweet & savory balance from pineapple and grapes
- Perfect texture with buttery cashews
- Made for entertaining in mini pastries or croissants
- Make-ahead friendly (a host’s dream)
Mother’s Chicken Salad on Mini Pastry
Yield: 12 servings
Prep Time: 30 minutes
Ingredients
- 3 cups shredded chicken
- 1 cup homemade boiled dressing mayonnaise (recipe below)
- 1 cup cashews
- 1 cup pineapple tidbits (fresh or drained if canned)
- ½ cup sliced green onions (about 4)
- 1 cup red or green grapes, halved (optional)
- 24 mini pastry puffs or mini croissants, prebaked
How to Make the Chicken Salad
In a large bowl, stir together the shredded chicken and the mayonnaise until well combined.
Add the cashews, pineapple, and green onions one at a time, gently folding each ingredient in so the texture stays light.
If you’re using grapes, fold them in last.
Cover and chill until ready to serve.
When it’s time to assemble, spoon the chicken salad into mini croissants or flaky pastry puffs for the perfect bite-sized sandwich.
Homemade Boiled Dressing Mayonnaise
My grandmother’s recipe is the heart of this dish.
Yield: 2 quarts
Prep Time: 15 minutes
Ingredients
- 4 eggs
- 1 cup vinegar
- 1 cup water
- 1 teaspoon salt
- 1 cup sugar
- 3 tablespoons flour
- 1 quart Miracle Whip
Instructions
- In a saucepan, bring the vinegar and water to a boil, then stir in the salt.
- In a separate bowl, mix the sugar and flour together. Beat the eggs, then combine them with the sugar and flour mixture until smooth.
- Slowly stir a small amount of the hot vinegar mixture into the egg mixture to temper it. Then pour everything back into the saucepan.
- Cook over medium heat, stirring constantly, until the mixture thickens.
- Remove from heat and let cool completely.
- Once cooled, stir in the Miracle Whip until smooth and creamy.
Adjust as needed:
- Too sour? Add a little sugar
- Too thick? Add a splash of cream or milk
Tip: This dressing is best made a few days ahead and kept refrigerated.

A Note from My Kitchen
This is one of those recipes that feels like home to me. It’s been served at so many of our family gatherings, always arranged on a pretty platter, always one of the first things to disappear.
There’s something about the combination of creamy dressing, sweet fruit, and buttery pastry that just feels like a celebration.
And honestly? It wouldn’t be spring or Derby season without it. Serve it with my other Derby Brunch Recipes or a Mother’s Day Tea for a perfect celebration.
