Together, these recipes are meant to be mixed, matched, and enjoyed at a relaxed pace. This creates a dinner party that feels indulgent and just a little bit daring. First Course: The Appetizers

Dark Chocolate Fruit Dip with Sea Salt
Ingredients
Method
- In a small metal bowl, beat the whipping cream until stiff peaks form. Prepare bowl & beaters by placing in freezer for 15-30 minutes – this speeds up the process.
- In a separate bowl, add the cream cheese. Using a mixer on medium speed, beat the cream cheese until smooth. Slowly add in the powdered sugar and cocoa powder and mix until well combined.
- Fold in the whipped cream until fully incorporated and mixture is thoroughly blended.
- Spoon into a small serving bowl and top with course ground sea salt. Serve immediately or store in an airtight container in the refrigerator until ready to eat. Surround with strawberries and other fruit of choice.

Chocolate Strawberry Dessert Nachos
Ingredients
Method
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
- Place strawberries in a medium bowl. Sprinkle with 4 teaspoons sugar. Set aside.
- Combine 4 tablespoons sugar with cinnamon in a small bowl.
- Brush tortillas with melted butter and sprinkle with cinnamon-sugar. Cut into wedges and place on lined baking sheet. Bake chips for about 10 minutes or until the edges are lightly browned. Remove from oven and let cool.
- Place chocolate chips and coconut oil in a small microwave-safe bowl and heat in 30 second intervals until melted and smooth.
- Place cooled chips on a pretty platter or large plate. Spoon strawberries over and drizzle with chocolate. Top with a few dollops of whipped cream and a shake of cinnamon. Garnish with fresh mint, if desired.
- Hint: Use Stacy's premade cinnamon & sugar pita chips in place of tortillas!

- Blend soup until smooth in a blender or food processor. Transfer to a clean sauce pan. Add cream and warm over low heat. Add chocolate, stirring constantly until melted and fully incorporated. Stir in salt & pepper.
- Cover & keep warm until ready to serve.
Strawberry Salad with Chocolate Balsamic Dressing

Braised Short Ribs with Chocolate & Rosemary
Ingredients
Equipment
Method
- Heat heavy large pot or Dutch oven over medium heat. Add pancetta and saute until crisp. Transfer pancetta to paper towels to drain with a slotted spoon.

- Add onions, shallots, celery, carrots, and garlic to pot. Cover, reduce heat to medium, and cook until vegetables are softened, stirring occasionally, about 10 minutes.
- Add wine and boil uncovered until liquid is reduced by half, scraping up brown bits for about 5 minutes. Add broth, tomatoes, parsley, thyme, bay leaf, and pancetta to pot.
- Return ribs to pot, partially cover, and simmer 1 1/2 hours. Uncover and simmer until meat is tender, stirring occasionally, about 1 1/2 hours longer.
- Transfer ribs to plate, discard bay leaf and thyme. Spoon fat from surface of the sauce. Boil sauce until beginning to thicken, about 8 minutes. Reduce heat to medium.
- Add chocolate, cocoa powder, and rosemary, stirring until chocolate melts. Season to taste with salt and pepper.
- Return ribs to pot. Simmer to re-warm about 5 minutes.
Fifth Course: The Side Dishes

White Chocolate Mashed Potatoes

Mayan Hot Chocolate
