Authentic Italian Bruschetta
As we count down the days until our fall adventure through Rome, Florence, Cinque Terre, and Tuscany, I’ve been bringing a little taste of Italy into our kitchen. One of the simplest and most delicious ways to do that is with authentic Italian bruschetta.
Unlike the heavily topped versions often found in American restaurants, classic Italian bruschetta celebrates just a handful of fresh, high-quality ingredients. Ripe tomatoes, fragrant basil, excellent extra virgin olive oil, toasted bread, and garlic come together to create an appetizer that’s bursting with flavor.
The secret? Use the very best ingredients you can find. Peak-season heirloom tomatoes or sweet San Marzano tomatoes make all the difference, and don’t skimp on a rich, fruity extra virgin olive oil.
Authentic Italian Bruschetta
Serves: 4
Ingredients
- 4 medium ripe heirloom tomatoes or San Marzano tomatoes, diced
- 8 fresh basil leaves, roughly shredded
- 8 tablespoons high-quality extra virgin olive oil (like Italian brands Roi or Frantoi Cutrera), divided
- 4 slices country-style bread or baguette
- 2 garlic cloves (1 finely chopped, 1 whole)
- Salt, to taste
- Freshly ground white or black pepper, to taste
Instructions
- Dice the tomatoes and place them in a medium bowl.
- Add the shredded basil and the finely chopped garlic.
- Drizzle with 4 tablespoons of extra virgin olive oil and gently toss.
- Season generously with salt and freshly ground pepper. Allow the mixture to sit for 10–15 minutes so the flavors can meld.
- Grill or toast the bread until lightly crisp on both sides.
- While the bread is still warm, rub one side of each slice with the whole garlic clove.
- Spoon the tomato mixture generously over each slice.
- Finish with another generous drizzle of extra virgin olive oil and serve immediately.
A Little Italian Tip
It’s pronounced “broo-SKET-tah,” not “broo-SHET-tah.”
In Italian, “ch” makes a hard “k” sound, just like in Bruschetta, Chianti, and zucchini. It’s a small detail that locals always appreciate and now you’ll be ready to order it with confidence.
Buon appetito!
Have you ever made authentic bruschetta at home? I’d love to hear your favorite variations. While tomatoes and basil are the traditional choice, bruschetta is also wonderful topped with roasted vegetables, creamy burrata, mushrooms, or even fresh peaches during the summer months.
